Chicken Adobo

Ingredients

  • 3-4 chicken breasts
  • 1/2 onion, diced
  • 3 cloves garlic, chopped
  • 1/3 c oil (vegetable, olive, etc)
  • 1 tsp pepper
  • 3-4 bay leaves
  • 2/3 c soy sauce
  • 1/3 c apple cider vinegar
  • 1 c water

Instructions

  1. Saute onion and garlic in 1/3 c oil until translucent.
  2. While waiting, chop the chicken into bite-sized pieces and rinse.
  3. Add the chopped chicken to the pan with the garlic and onion.
  4. Add a teaspoon of pepper to season.
  5. Stir chicken and saute in pan until it turns white.
  6. Add 1/3 c of soy sauce.
  7. Add 1/3 c of apple cider vinegar.
  8. Stir and mix for 10 minutes.
  9. Add one cup of water.
  10. Throw in a few bay leaves.
  11. Add in the remaining soy sauce (1/3 c)
  12. Mix everything together thoroughly.
  13. Simmer on low-medium heat, leaving it alone for 20-30 minutes.
  14. Serve over rice.
