
Chicken Adobo
Ingredients
- 3-4 chicken breasts
- 1/2 onion, diced
- 3 cloves garlic, chopped
- 1/3 c oil (vegetable, olive, etc)
- 1 tsp pepper
- 3-4 bay leaves
- 2/3 c soy sauce
- 1/3 c apple cider vinegar
- 1 c water
Instructions
- Saute onion and garlic in 1/3 c oil until translucent.
- While waiting, chop the chicken into bite-sized pieces and rinse.
- Add the chopped chicken to the pan with the garlic and onion.
- Add a teaspoon of pepper to season.
- Stir chicken and saute in pan until it turns white.
- Add 1/3 c of soy sauce.
- Add 1/3 c of apple cider vinegar.
- Stir and mix for 10 minutes.
- Add one cup of water.
- Throw in a few bay leaves.
- Add in the remaining soy sauce (1/3 c)
- Mix everything together thoroughly.
- Simmer on low-medium heat, leaving it alone for 20-30 minutes.
- Serve over rice.
