Corn Fritters
Ingredients
- 3 cups all-purpose flour
- 4 tsp baking powder
- 2 1/2 tsp salt
- pepper
- 4 tbs milk
- 4 tbs sugar
- 4 egg yolks, beaten well
- 4 egg whites, stiffly beaten
- 2 1/2 cups cream-style corn
- Oil for deep frying
Instructions
- Heat oil in deep fryer to 375 degrees F.
- Mix flour, baking powder, salt and pepper, milk, sugar and egg yolks and beat until smooth.
- Fold in egg whites and corn.
- Drop one tablespoon of batter into hot oil, frying only a few at a time.
- Once fritters have risen to the top, turn them over. Keep turning during cooking.
- When fritters have reached a deep, golden colour, remove from oil with a slotted spoon and drain on paper towels.
