Corn Fritters

Ingredients

  • 3 cups all-purpose flour
  • 4 tsp baking powder
  • 2 1/2 tsp salt
  • pepper
  • 4 tbs milk
  • 4 tbs sugar
  • 4 egg yolks, beaten well
  • 4 egg whites, stiffly beaten
  • 2 1/2 cups cream-style corn
  • Oil for deep frying

Instructions

  1. Heat oil in deep fryer to 375 degrees F.
  2. Mix flour, baking powder, salt and pepper, milk, sugar and egg yolks and beat until smooth.
  3. Fold in egg whites and corn.
  4. Drop one tablespoon of batter into hot oil, frying only a few at a time.
  5. Once fritters have risen to the top, turn them over. Keep turning during cooking.
  6. When fritters have reached a deep, golden colour, remove from oil with a slotted spoon and drain on paper towels.
